I recently rediscovered this recipe I had found in a Better Homes and Gardens magazines more than 45 years ago. It was Beautiful Daughter’s favorite treat when she was a very little girl. I warn you this is addictive. Darlings, you can never have too many chocolate recipes.
1/2 Cup butter – 1 cup sugar – 2 eggs at room temperature – 1 tsp vanilla – two 1 ounce squares unsweetened chocolate, melted – 1/2 cup sifted all-purpose flour – 1/2 cup finely chopped walnuts
One recipe mint frosting – One recipe chocolate glaze
Cream together butter and sugar until fluffy; beat in eggs and vanilla. Blend in chocolate, stir in flour, then nuts. Pour into a greased 8 x 8 pan. Bake at 350F oven for about 25 minutes. Don’t over bake so watch careful. Check at 20 minutes with a toothpick and if it comes out clean, it’s done. Cool; spread with frosting, then glaze. Cut in 2 x 3/4 inch bars. Makes 40.
MINT FROSTING: Combine 1 cup sifted confectioners’ sugar, 2 tbsp. soft butter, 1 tbs light cream, and 1/4 to 1/2 tsp peppermint extract; beat well. Spread over cooled brownie layer; let stand till set. Don’t refrigerate. Icing should be at room temperature to spread the glaze.
CHOCOLATE GLAZE: melt two l ounce square unsweetened chocolate with 2 tbs butter. Spread over frosting. Now you can chill the bars. When the glaze has set score with a hot knife (dip your knife in a bowl of hot water and wipe dry), then cut into bars
